A pro stock helmet is one made for use in professional hockey. These helmets will often have a different liner (padding) than you'd find in a retail model and may or may not qualify as certified for amateur use because of the type of padding used.

Additionally, the graphics - size and placement of logos - allowed in the NHL are different from those found in retail helmets. The NHL only allows the one logo placement at the forehead, while retail helmets might have as many as 4 other logo placements (sides, back and some chin straps).

As for the comparison between Mission and Easton, Mission had 150 players in the NHL using their helmet before they were bought out by Bauer in September. They were also in the process of suing Easton for for an alleged helmet design infringement before they sold.

Six months after selling their company, Mission still has over 100 NHL guys in their helmet while Easton has less than 50, with half of those coming from guys who no longer had Mission as an option. As such, if you accept that what the best players wear is an indication of product performance, you'd have to give Mission the nod for best helmet as compared to Easton.
